Maximized Parmesan Chicken Fingers


This was dinner.
I love chicken fingers and so do the kids.
Tonight we made "healthy chicken fingers".


They were delicious!
Best part is, this recipe fits in to the Maximized Living Advanced Plan.

Here's my step by step instructions...


 I used 1 cup of coconut flour and 1 1/2 cups grated raw Parmesan cheese.  I added some garlic powder, salt and pepper to taste.  I stirred these ingredients together and spread them on a plate.

Eliminating flour and bread crumbs from the "breading" makes this a very healthy option:)





I dipped each piece of chicken in egg and then covered them with the parmesan "breading" mixture.
(for my 4 chicken breasts I used 3 eggs.  I beat them with a tablespoon of water.)



Dipped and ready to fry!

I used about 3 tablespoons of extra virgin first cold pressed olive oil.
(I know it sounds picky or snobby to be this precise about the olive oil but I promise, these things make a difference...you must read the book...it will transform the way you think about food.)



At first I had my heat at Medium high.  Everything started off looking fantastic...


But they got a little too browned for my liking on the outside.


So I turned the heat to medium and I was much happier with the results.


 So tasty!

I had leftover "breading" so I sliced up some zucchini.


There they are naked.


Here they are all dunked in egg and covered in parm cheese!


I threw them in the pan when the chicken was done.


These were a big hit with the kids.


Mike was stoked when he came home to this meal.  He added some hot sauce and went to town.

Mikayla went to Mike's Maximized Living Makeover last weekend and came home transformed.  She is determined to cut sugar (sugar meaning everything white: flour, startch, etc) out of her diet and eat food that is good for her body.  With daughter #1 on board, I am excited to up the anti in the quality of food that we eat around here.  It's more fun to try new things when the rest of the family appreciates the outcome and the effort it takes!

Snoozy Suzy


When girls are sleeping in this house, they are labeled "Snoozy Suzy".
Not sure why how or when this name came about but it stuck and we use it.

Cambria is or most frequent Snoozy Suzy these days.

I caught her sacked out on the couch the other day.  Princess was soo sleepy kisses and hugs from the kids didn't even phase her.

I took advantage of her sleepiness and got a few photos of all her little parts.

It had to be cut off 5 days later because she grew.

Insta Friday

My phone goes everywhere with me.  
I love capturing random moments that would have passed by undocumented if it weren't for my trusty iphone.

Here's this week's randomness...



Cambria sported her first friendship bracelet.
Her {6 year old BOY} cousin Ethan made it for her.
It's so cute.
He was so cute making it and so proud giving it to her!!

Have you done friendship bracelets with your kids?
They are so fun and you can modify the degree of difficulty as they get older.

Chick-a-dee weighed in at 9 pounds 5 ounces at her final midwife appointment.
Huge.
She's not obeying.
 She keeps growing against my wishes!


Caiters often sneaks my phone and does things like this.
Once she forfeited my Words with friends game for me.
Once she called the midwife.
It's out of hand.

What's up with a 2 year old mastering technology quicker than me??


Glorious sunshine poured down on us this week.
So great.


True-dat.

Once you've had a baby at home, there is no other way!
Don't knock it till you've tried it.

My beautiful 11 year old gets a hold of my phone sometimes too.
And does this.
She has also played Words with friends for me.
And she makes all my calls and texts for me while I am driving.


This is my go-to outfit.
Everyday.
 Like seriously.
It works and not much else does
Or I don't have the desire/energy to figure anything else out.


In my town we have a fantastically huge Canadian flag.  
It's massive.
ginormous.

Me either last time I was in town.
It kinda bugs me that it is gone.
Mostly cause I don't know the "why" in the matter.
Ya I'm a little nosey. 


Cleaning out Caleb's room I found this.

Best part?  Mailee and Maddie love to play too.  
They disappear for hours and play nicely together. 
 It makes them happy and makes my house quiet.
Win-Win.

Used to be a "have-to" drink.
Now they ask for more.



We told Cait her buns were eating up her swimsuit.
She thought it was funny and didn't want to fix it.
I'm glad.
It's pretty cute.

Mailee would be considered "Mommy #3"

She specializes in making pancakes, holding bouncing and "shushing", and car seat buckling.


Toddler Time at the library.
At the end they give each toddy a sticker and a stamp.

For myself and the other kids?
We get songs that stuck in our heads all week.
"wake up wake up wake up sleepy bunnies"
over. and over. and over.



Cait is a finger sucker/hair twirler.
Here are the results of a particularly intense sucky-twirly session.
This one had to be snipped out.


This reminds me of 9 years ago.
sniff sniff.

Cambria still sleeps a lot of the day.
When she's not sleeping she is often nursing.

When she is awake, it's playtime and she has a lot of willing playmates.

Another week is over.

It's a crime that she's a month old already.
9 pounds, 5 ounces of sweetness.

Five Alive


My little guy is five today!
He has requested a party at the park.
We are off to have that party this morning.  
He woke up excited and went right for the fridge to peek at his cake.


Caleb is a sweet and loving boy.
He is full of energy.
He likes green.
He likes tigers.
He always wants to wrestle with Daddy.
He finds sitting still a challenge.
He eats a lot.
He loves riding his bike.
He loves to snuggle but only if it's his idea.
He is loving to his little sisters.
He looks up to his big sisters.
He is creative with unwanted cardboard.
He is great with numbers.

I love my Caleb so much.  He brings a whole different feel to our home.  I am thankful for our sweet, rambunctious, smart, energetic one and only precious son!
